Oktoberfest Chicago – Dovetail Brewery Brings on the Brews

By Josephine Layug

The best part of going to Oktoberfest Chicago events is always the beer and food. I had the privilege of previewing the featured beers at Dovetail Brewery and their upcoming brews that will be introduced at their Oktoberfestiversary.

If I had a choice, I would always choose wine over beer, but Dovetail Brewery in Ravenswood might have me converting to beers soon! I really enjoyed the beers I sampled. My friends and I tried the Hefeweizen, Rauchweizen and the Groziskie. The Hefeweizen had a perfect balance of fruit and clove. I really enjoyed the fact that this beer left a pleasant after taste, unlike many other beers. The Rauchweizen is a smokier version of the Hefeweizen. It was a darker beer and we could taste the smoke flavor – almost bacon like! The Grodiskie was the strongest beer of the two, with 3.8% of alcohol.

Bill Wesseink and Hagen Dost are the owners of Dovetail Brewery. The brewers used to be Civil Engineers who decided that they wanted a career change and began taking beer classes in Germany. Luckily, the duo brought their expertise to Chicago. I had no idea that making beer is so complex, but when it is brewed and ready, it is worth all the time and effort. They love what they do so much that they offer tours of the Brewery and tastings of their latest creations!

While most places are B.Y.O.B, Dovetail is the opposite: it’s a Bring Your Own Food (B.Y.O.F) Brewery! Grab some food and friends and head on over to Dovetail for a delicious glass or two of German Beer. Make sure to visit the brewery for Oktoberfest Chicago next year!

Dovetail Brewery is open Tuesday through Thursday from 2 p.m. to 10 p.m., Friday from 12 p.m. to 11 p.m., Saturday from 11 a.m. to 11 p.m., and Sunday from 10 a.m. to 8 p.m.
