Serving vegetables plucked from local farms, grass-fed quality meats selected for their sustainable production, and daily catch pulled fresh from the sea. The natural accents beautify the entire 1 Hotel South Beach property. Which is designed by local artists and built using reclaimed materials. From the towering living garden walls welcoming you as you valet. To an impressive moss mural greeting you at the entrance. And showcasing thought-provoking up-cycled art through-out, it is clear they strive to honor nature in all aspects. Which includes its monthly Full Moon Celebration. Giving guests and the public a place to gather and recharge. With tarot readings, moonlit yoga sessions, telescope gazing and more.

Full Moon “Spirited” Dinner Series

To indulge in this celestial energy with a culinary twist, Habitat is hosting the Full Moon “Spirited” Dinner Series.  From 6:30pm – 9:30pm, guests get to experience a three-course dinner prepared by Chef Thanawat Bates. With cocktail pairings by a selected alcohol brand curated by Steven Minor, the Beverage Director at 1 Hotel South Beach. We had the pleasure of attending the first one of the series, featuring cocktails prepared with Oxley Gin. A premium gin using pioneering cold distillation process.

While I’ve always tried ( and failed) to love green juices, I was pleasantly surprised at how much I enjoyed the cocktails of the evening. Though they all had a strong veggie base, the fruity undertones, smoothness and zesty notes of the gin balanced it out. My favorite had to be the Honeydew Melon and Fennel “Soda”. It was flash carbonated and created with Oxley Gin, Seedlip #108, Midori, Fennel, and Honeydew Melon.

The food tastes as heavenly as the presentation looks. And, not only did I feel amazing knowing that I was eating fresh, local, and sustainably-sourced farm-to-table cuisine. But also, that a portion of the proceeds would be donated to Food Rescue US. Bringing healthy food to those in need. Though it’s hard to choose a favorite, one of the highlights had to be the Hokkaido Scallop Crudo with Grapefruit, Vanilla, Ginger, Rosé Vinegar and Basil Seed. Which I would’ve like to frame rather than eat, but I couldn’t resist. I also have to mention dessert, because that Quince Tart and Sorbet with Spicy Honey and Pistachio stole my heart. The sorbet adding a refreshing contrast to the warm nutty tart. With just a pinch of spicy to add a kick to this sweet delight.
