EST.33 Thai Craft Kitchen and Brewery: Exclusive Master Brewer Class

Todd Space is Head Brewer at EST.33 Thai Craft Kitchen & Brewery. The restaurant and brewery are located on the 4th floor of the Brickell City Center mall. The restaurant perched atop the posh mall has been open since January of 2021. Across from Tacology, sits the open and modern Thai restaurant with craft beers on tap and an extensive cocktail menu. The exterior bar is a great place to get an introduction to the roots of this special restaurant.

The Thai Connection

EST.33, signifies the year Singha, the renowned Thai beer, was first established. The owners of the crisp pale ale juggernaut from Bangkok own the EST.33 location. Brand hints can be found throughout the restaurant, along with that auspicious Golden Lion from the Singha beer label. The only craft brewery in Brickell City Center is home to resident Beer Master Brewer Todd Space. Todd has expanded the beer list beyond the four original imported recipes, to include a few of his own delightful creations. 

Todd at EST.33 has built on those four original craft beers from Bangkok, with a number of interesting brews. Which includes a rich and hoppy IPA called ‘One Night In Bangkok’. A version of a Vienna-style lager the ‘One and Only Kopper’ which possesses some sticky toffee pudding vibes with a lightly sweet and clean finish. 

All of the house brews have a remarkable drinkability factor, the majority of brews don’t exceed 5%ABV. My favorite beer is called ‘Aromatic Snowy’. It’s a hazy summer wheat beer, that is fantastically thirst-quenching. It pairs extremely well with the American-style smoked Brisket served with Bao buns, which is a standout. 

Vibrant Flavors

The combination of rich barbeque and vibrant Thai flavors, paired with Todd’s refreshing, pallet cleansing brews, is a jungle safari for your senses. Enabling you to continue your sinful indulgences well beyond the point of being full. Todd recommends mingling his brews with the house-smoked meats and fresh papaya salad, exploiting the juxtaposed vibrancy of smoke, chili, and citrus.

Todd instructs a Master Class on beer making, open to the public inside the onsite brewing facilities. A whirlwind of information and knowledge will be bestowed upon you. So grab a beer at the bar and take notes. Todd will take you through his mash process and into his high-tech fermentation room. Students can take a hands-on approach and observe how craft beer is made. The more you drink, the more you learn. It’s ok if some of the information goes over your head, as there’s plenty of time to catch on and be enamored by Todd’s scientific process to brewing. Allowing guests to peer into microscopes and watch yeast cells making sweet love, is an oddly satisfying voyeuristic experience that one wouldn’t typically see at your average brewery tour.

EST.33 is not your average brewery, and Todd Space is not your average brewer. He’s a maverick in his craft and sits near the top of the pantheon of local South Florida Head Brewers. Todd provides training to the region’s top burgeoning brewers looking to receive instruction from the best. By taking his Master Class, the average homebrewer or just someone who has an interest in learning more about craft beer can be inoculated, just like his freaky yeast, into the world of craft beer brewing.
