The Chelsea Wine Vault is a store located in Chelsea Market and run by non presumptuous wine lovers for wine lovers like yourself. Their wine vault is full of wine gems for all kind of wallets. It’s one of New York’s friendliest and best-stocked fine wine stores. Chelsea Wine Vault’s success is based on Dan and Don’s (founders) philosophy “we only buy wine we love,” and for this reason, we can truly stand behind the products on our shelves. It’s a temperature-controlled wine paradise. Here, they host small parties and events. Did I mentioned they also offer wine education..? Yes, they have daily wine classes to keep you updated on your wines.

The pairing and culinary program created by Sara Lehman AKA “Somm in the City” was fun and engaging! Sara is a trained chef and wine Sommelier who lives and wines in the city that never sleeps, New York. Our hosts welcomed us with a fantastic southern French sparkling rose and a great smile.  Once inside, there were high cocktail tables that were creatively decorated and strategically placed as hors d’ oeuvre and wine pairing stations throughout the room.

Somm in City, a creative and delicious initiative launched The Savory Side by Somm in the City, a program that promotes small bites paired with fabulous hand picked wines. She believes that fresh and delicious small bites menus are a fantastic and practical addition to today’s fast paced life styles, and of course, wine is part of that perfect formula. Sara hand picks the wines and cooks each of the canapés herself.

The first pairing was a Segura Viudas Cava paired with Cava Caprese Bites. This Spanish Cava is a fantastic, simple complement to any cocktail party. The food reflected well on the flavors of the wine- a great reminder that wine is food!

Second, was a Brown Sugar Bacon & Melon paired with Taittinger brut Champagne. I call Champagne a food because of its complex blend of some 30 Chardonnay and Pinot Noir vineyard grapes. I loved this revolutionary pairing comprised of rich bold flavors of bacon and summery peach and almond flavors inside my mouth!

Next, a Sharp Cheddar French Dip paired with a Cote Mas Cremant De Limoux Rose Brut, a serious red blend from the south of France, Languedoc Roussillon, a refreshing cremant with combined delicate and spicy flavors of dried cherries and berries- a striking rosé!

Additionally, Sara had a little treasure placed on each table, amazing bittersweet chocolate with bacon which I deliberately paired again with Cote Mas cremant De Limoux and yes, you guessed it well…they were awesome together.
