It seems an unwritten rule that any food-centric trip to Las Vegas absolutely requires a visit to a sushi spot. Something about decadence of Vegas just begs to be matched with the richness of a great sashimi or maki roll. One fantastic option for getting your fish fix is the Blue Ribbon Sushi Bar & Grill Las Vegas at the Cosmopolitan Hotel. This swanky spot has everything you could wish for to satiate your Vegas sushi hankerings, including both typical offerings for traditionalists and more exotic fare for those looking for something new and exciting. Just like the restaurant itself, the patrons at Blue Ribbon ooze class and sex-appeal, so make sure to don your finest attire if you want to fit in with the gorgeous crowd.

To begin your meal, the Tofu & Seaweed Salad, dressed in lemon, ginger, and soy, is a solid choice. The portion size is ample, yet the appetizer remains remarkably light. The juicy tofu blends beautifully with the smooth, slightly briny seaweed to create an utterly pleasurable dish. Another not-to-be-missed starter is the Karai Kaibashira Roll (Spicy Scallop Roll). The plump, tender scallop is coated in just enough heat to make your mouth warm before being wrapped in seductively soft sushi rice. If you are looking for a relatively simple roll to start off your evening, this is one that should not be overlooked.

Ever since a fellow foodie told me about a memorable adventure he had eating jellyfish in China, I’ve had a desire to try some myself. So when I saw Kurage Sunomono (Jellyfish in Vinegar Sauce) on the menu, I had to order it.  Jellyfish is, without a doubt, one of the most intriguing foods I’ve ever tried—and I’ve tried a lot. The fish was served cold and bathed in an acidic vinegar sauce, and, as one might predict, the texture was rather chewy. Even though this was not my favorite dish of the night, the interesting consistency and bright dressing were definitely still enjoyable. More importantly, it is an unforgettable taste experience that is worth checking off your foodie bucket list.

Strangely enough, one of the main reasons I came to Blue Ribbon was to sample their Fried Chicken “Blue Ribbon Style.” This glorious, crunchy treat is reputed to be one of the best of its kind in the country and, after indulging in it, I must agree. The matzo meal coating combines with the pepper and paprika seasoning to create a savory, crispy skin that bursts in your mouth with pure pleasure, while the incredible sweet and spicy wasabi-honey dipping sauce amplifies the flavors to make the entire dish irresistible. It may sound strange or even sacrilegious, but make sure you order fried chicken at this unique sushi joint.
