Verde at PAMM: Art, Food, and Bay Views.
Verde at PAMM is a modern, casual restaurant with sweeping views of Biscayne Bay. It reopened on November 7, 2020, alongside Pérez Art Museum Miami after closing in March due to the COVID-19 pandemic. This waterfront eatery welcomed guests back to their expansive outdoor terrace and limited indoor seating with the launch of Executive Chef, and Miami’s beloved pastry queen, Hedy Goldsmith’s new menu.
The menu is a reflection of Goldsmith’s diverse culinary background from her time in Los Angeles exploring clean eating with her favorite Israeli ingredients. Her inspiration was to create dishes with a focus on fresh, clean and light ingredients. She created a menu with many recipes she’d make at home, wanting guests to have a comforting, feel-good experience.
Verde at PAMM’s New Menu
Starters include the Avocado -Burrata Toast, a soon-to-be cult classic with heirloom tomatoes, shaved celery root, upland cress, avocado, and basil oil. Also among our favorites is the Mediterranean Sampler, house-made hummus, eggplant, tzatziki, tomato-mint salad, tahini vinaigrette, za’atar flatbread.
The popular signature Pérez Chopped Salad is back on the menu with a refreshed Israeli twist including little gem lettuce, napa cabbage, cucumbers, chickpeas, avocado, radishes, roasted sweet potatoes, crumbled feta, pickled olives, farro and preserved lemon vinaigrette with shawarma chicken kebab or grilled salmon as protein add-ons.
The sandwich selection features the Verde Chicken Club, grilled chicken breast, avocado, lettuce, tomato, bacon, and rosemary aioli; and Verde Burger, with cheddar cheese, lettuce, tomato, pickles and Norfolk sauce.
Main dishes include Tortilla Española, potatoes, onions, piquillo peppers, shaved manchego, lolla rosa salad, chorizo piquillo pepper vinaigrette; Chicken Under a Brick, with crispy boneless half chicken, herb smashed potatoes, baby kale and chimichurri; and Grilled Salmon, green goddess fennel slaw, roasted beet emulsion and potato latkes. I salivate just thinking about the Prosciutto Pizza, with roasted garlic monay, fontina, lemon zest, and crisp herbs. The lemon zest really ties in and amplifies all the flavors so perfectly.
Sips & Sweets
Verde also serves handcrafted specialty cocktails and a select list of carefully curated wines complement the creative cuisine. For those who like a kick, a Bloody Mary, vodka and house made mix; or Verde Spicy Margarita, tequila, Ancho Reyes, limes, will not disappoint. While if you’re craving some sweetness, the floral Lavender Palmer with bourbon, house made lemonade, lavender, iced tea; and Rose Sangria with rose, vodka, orange, grapefruit and pineapple are also excellent choices.
But don’t forget the real sweets! Goldsmith’s renowned dessert recipes and baked goods round out the menu. The Verde Cookie Plate comes with an assortment of nostalgic-flavored cookies and the Seasonal Bread Pudding currently features Granny Smith apples, salted caramel and whipped cream.

PAMM
Pérez Art Museum Miami is the contemporary art museum where Verde is located. We highly recommend visiting both for a trip that’ll satisfy both the imagination and appetite. Their top priority is the safety of all visitors, volunteers, and staff. To follow social distancing guidelines and manage gallery capacity, members and visitors must reserve timed tickets online ahead of their visit. PAMM has temporary and on-goign exhibitions, so even if you’ve been before, you’re likely to continue encountering different pieces. Current exhibits include Allied with Power: African and African Diaspora Art. Along with MY BODY, MY RULES, a new group exhibition that examines the mainstream portrayal of women.
Safety Precautions
Verde at PAMM is taking rigorous safety precautions and is marked a “Safe Café,” a companywide standard implemented by Constellation Culinary Group to provide a safe environment for employees and customers. These practices include QR code menus, enhanced sanitation, social distancing, service modifications, PPE for all staff, personal health monitoring, and supply chain continuity.
Verde is open Thursday 5 to 8 p.m. and Friday through Sunday from 11 a.m. to 3:30 p.m. The bistro bar (Grab & Go area) hours are Thursday 2 to 8 p.m., and Friday through Sunday 11 a.m. to 5 p.m. For more information or to make a reservation, click here.
PAMM has implemented new hours of operation and safety precautions, including one-way paths and hand-sanitizing stations. Face masks covering the mouth and nose are required for all visitors and staff.
