Spring Chicken – A New Kind of Eatery In Coral Gables

Get excited University of Miami students, because Spring Chicken, the newest restaurant by 50 Eggs Inc, has just opened across from campus in Coral Gables! Spring Chicken provides the farm-fresh goodness of home-style Southern cooking with an emphasis on environmentally “friendly food.” If you know 50 Egg’s Yardbird or Swine, then you know to expect incredible Southern comfort food. But Spring Chicken creates a laid back, comfortable atmosphere for friends to shoot the breeze and catch up in the midst of busy city life.
The opening night party was an explosion of comfort food. As a live country/folk band played, food and drink poured out of the kitchen all night long. What’s a southern party with out Sweet Tea and Freshly Squeezed Lemonade? It was so sweet and so fresh. And it was also so perfect for washing down the endless supply of chicken that awaited all in attendance.
Beautiful waitresses in cutoff jean shorts and tied up flannels served platter upon platter of chicken sliders. I tried the Backyard BBQ slider first. It’s a Pulled Smoked Chicken Breast, served in a House BBQ Sauce. It is topped with House Pickles, fresh Cole Slaw, and crispy Onions, and served on a toasted Potato Bun. It was so tasty. The already tender chicken was so moist and flavorful in the House BBQ Sauce. If the sliders weren’t flying off the tray, I would have eaten so much more!
The next slider out of the kitchen was the Smoked Chicken Salad -smoked & pulled Chicken Breast with Green Apples, Dried Cranberries, Toasted Pecans, Celery, Red Onion, Butter Lettuce, and ripe Tomatoes. This is all served on toasted whole wheat bread. This dish epitomizes Spring Chicken’s passion for field-to-table southern food.
Last but certainly not least, I tasted Spring Chicken’s signature Yardbird Slider. The toasted Potato Bun was filled with a recipe award-winning crispy Chicken Thigh, crunchy House Pickles, and creamy Southern Sauce to create a classic southern delicacy. This dish really should be the pride of the south.
Spring Chicken also served out skewers of Watermelon infused with Mint. A perfect and refreshing treat for the Miami humidity.
And then there’s dessert. Two delicious types of Milkshakes circulate through out the room, and I am embarrassed by how quickly I devoured them. The only way to describe the monthly flavor was like drinking whipped cream flavored pie crust. It was light and sweet and heavenly. The second milkshake, Creamsicle was a tangy and citrusy. It tasted just like summers growing up, running through the sprinklers.
Spring Chicken and their comfort food will make you feel at home. It would be a shame to miss out on this delicious eatery. Especially all you UM students, make your way across US-1 to Spring Chicken, ASAP!
