Salvaje is Where The Wild Things of Miami Are!
Salvaje is unleashing the wild in Midtown Miami! The Japanese fusion restaurant is an international sensation. With locations in Spain, Panamà, and Colombia. And now we get to enjoy the first U.S. location! Which is housed on the rooftop of the 31-story tall hotel, HYDE Midtown. So we highly recommend it to fans of good music, delicious food and elevated views. Those who make it in time for sunset get an extra mesmerizing treat!
The upscale eatery’s name translates from Spanish to “savage”. *Cue Megan Thee Stallion*. Aiming to bring our wildest side to life, that which can’t be tamed. The ambiance is immediately captivating as you enter. With elegant and whimsical decor throughout. Comfy daybeds, beautiful light fixtures, and huge golden rhino heads. At it’s center, an omakase and cocktail bar. And as I mentioned, a phenomenal view. Wether you catch a romantic sunset or twinkling city lights.
Salvaje Miami
Acclaimed Executive Chef Fermin Azkue helms the kitchen at Salvaje. Using elements of the highest quality. including Octopus from Spain, Alaskan King Salmon, Japanese Tuna, grade-A Japanese Wagyu, and more. Salvaje’s vision is to use the best quality ingredients found nationally and internationally when preparing dishes. In addition to a seasonally changing sushi and omakase menu, some signature dishes include Grilled and Glazed Lamb Shank – lamb, teriyaki sauce, crispy wonton, brussel salsa Kimchi; and Lobster Dumplings – lobster, lobster bisque base, crispy wonton, micro mint.
The Drinks
Cocktails are named after “films that feature some steamy and provocative sex scenes that impact the storyline”. For instance, To Bee or Not To Bee – Brugal 1888, guava, coconut, fermented strawberry, Mulassano dry vermouth; and Wild Heart – Sipsmith gin, ginger & lemongrass, Kura Japanese Vermouth, lulo & mango. As you may expect, the presentation is just as extravagant. Even the classic Moscow Mule is served in a golden mule-shaped mug. Which may turn into a unicorn if you have enough!
The Food
Salvaje’s menu can be overwhelming with so many scrumptious options. But you won’t regret starting off with Brussel Sprouts in Kimchi sauce. Or biting into perfectly crunchy Salmon Crispy Rice. And letting the Tuna Tiradito with ponzu, ginger, and avocado melt in your mouth. Also, the Super Dynamite roll is a must try! With King Crab wrapped in soy leaf, and mouth-watering truffle butter.
If you simply can’t get enough truffle, the Grilled Avocado is sure to satisfy! Although avocado is great on its own, the ponzu, truffle and grill give it a heavenly touch. It feels like a cloud of flavors dissolving in your mouth. Of course, I also have to mention the Wagyu Fried Rice. I loved the different textures, like the tender meat, popping roe, and runny egg.

Dessert
I know it’s hard not to go savage with previous courses, but make sure to leave room for dessert! Salvaje offers a variety of sweet treats. Including their popular Coconut Tres Leches with caramelized coconut, whipped cream, lime and dulce de leche ice cream. As well as Shiso Cheesecake with passion fruit jelly,crumbell and yusu cream. While chocolate lovers shouldn’t miss the Choco Salvaje, a baked chocolate mousse with choco yuzu ice cream.
