PINCH Kitchen Craft Collab 3.0 with MIA Beer Company
Stepping into PINCH Kitchen you immediately get a comfortable home-like feel from the place, the tables set for a family-like dinner. The evenings beer pairing was to honor Piero Rodriguez, founding brewer for MIA Beer Co., who recently passed away in a fatal car accident.
Evan Benn, Chief Editor of Indulge Miami magazine, was our host along with Michael Demetrus, Brewmaster at MIA Beer Co., giving the guest a description of each of the beers being served. Chef Rene and Chef John of PINCH Kitchen had prepared the decadent dishes for the evening.
For starters, guests were served Wildling American IPA, a fruit forward ale with strong tropical hop flavor, ABV of 6.5%, paired with an anamuse-bouche: in-house chicken liver paste on a square brioche charcuterie with spicy Dijon mustard and pork chicharron cracklings.
First course, a pouring of Big In Japan Ale, a sake beer brewed with sake yeast with an ABV of 10% yet so smooth that you can easily have another glass. Sticking with an Asian theme we were served beet-cured Scottish salmon, forbidden rice, pickled plum , micro cilantro and avocado.
Next pouring was the Regresa a Mi Berliner Weisse, one of their flagship beers with guava and hibiscus added in the yeast and fermented down giving it that tart and sour flavor, only 3.5% ABV. The guava fruit is added giving it that pink hue. The fruity beer was paired with alitas de pollo cofitadas (candied fruit chicken wings) which were both sweet and spicy. The guava flavors in the beer complimented the spicy sauce on the wings and even better when lathered in the house made blue cheese dressing.
Third course was a dish of cod dumplings, blue cheese, fresh horseradish, preserved lemon vinaigrette. A leek fondue, made with butter making it nice and creamy, brought together with blue cheese. The cod dumplings were the perfect topping for this creamy dish. The Baltiziar Baltic Porter, a malted chocolate lager with an ABV of 7.8% complimented this dish with its dried fruit sweetness that finishes with a hint of dark chocolate and light roasted coffee.
Seared duck breast, baby bok choy, artichoke barigoule topped with black curried sauce, so juicy and tender to the bite paired with Machetazo Tart Red Ale, a hop blended sour ale with a big red malt body, sweet and tart with a 7% ABV.
With lots of hops and aroma, El Cuco White IPA, is a session beer of under 5% ABV and paired nicely with the pineapple hibiscus thyme gelato topped with a tapioca biju for dessert.
For the finale, a grand ode to the beloved Piero, was a sorbet infused with Babalu, an orange carrot ginger Berliner Weisse, which was the last beer Piero brewed.
Refreshing brews paired nicely with delicious dishes, great folks from the craft beer community and a wonderful cause made this dinner all the more heartfelt and special. Pinch Kitchen knows how to make you feel at home while serving you unique delicious dishes.
