Pawn Broker – Miami Rooftop Cocktail Lounge
Pawn Broker is a serious indoor-outdoor rooftop lounge, conceived by Pubbelly Restaurant Group’s co-founder, Chef José Mendin, with a cocktail menu developed by bar chef Derek Stilmann that is deeply rooted in the Prohibition Era and elevated to the next level by the talented mixologist.
The bar, with spectacular urban skyline views, is situated at the top of The Langford, a historical building lovingly restored to its Beaux Art grandeur, and into a retro chic hotel in Downtown Miami’s emerging Arts and Entertainment District.
After a much-anticipated dining experience of the Pubbelly Boys’ lobby leveled restaurant, PB Station, we were graciously invited to explore Miami’s latest and greatest venue for entertainment and cocktails. Perusing over Stilmann’s bar menu, we found pages of interesting drinks defined by black ink illustrations, cheeky quotes, and embellished penned descriptions.
Stilmann, – forever in search of the endless summer, aided by a swizzle cocktail and a warm climate, managed to capture summer in a cocktail with his re-interpretation of the Mojito.
The tri-colored Rincon consists of Don Q Cristal white rum poured over crushed ice and layered with yellow chartreuse, homemade coconut liqueur, and Peychaud’s Bitters, and finished with a squeeze of fresh lime and slapped mint.
No way is this gin lover not going to order a drink in a white porcelain bathtub vessel, and dubbed Giggle Water. This whimsical cocktail references when, during the Prohibition Era, determined folks made gin in their bathtubs.
To reflect the potency of the homemade spirit, this cocktail is made with Martin Miller’s Westbourne Strength gin, which tastes similar to a classic London Dry style, but is bottled at the much higher 45.2% ABV. Added to the tub are housemade champagne syrup, Fever Tree’s Indian tonic water, and –as the soapy bubbles, molecular-generated lavender foam.
Intended as a nightcap, -a final drink to end the evening, the Scottish Goodbye blends coffee tincture and housemade coconut cream with both 12 year old Macallan’s single malt scotch and Ron Zacapa rum.
This sweet and creamy cocktail indeed reverses the need for an Irish Goodbye –the act of disappearing from a party or bar without saying goodbye to anyone, -usually to avoid having your car keys taken away, or getting caught up in never-ending goodbyes when you’re desperate to leave.
Clearly my favorite, I would definitely order repeated rounds in order to extend my stay at the Pawn Broker, and drink this delicious dessert-like cocktail until closing.
The lounge also serves beer and wine as well as a diverse selection of tasty bar bites from the PB Station kitchen, such as Guacamole mixed with lump crab and Brioche Grilled Cheese sandwiched with short rib. We definitely recommend the ceviche-prepared Yellowtail Taquitos. Read PB Station review
