Maestro Dobel Tequila Hosts Pairing Dinner at Bagatelle Miami

The smooth Diamanté is a blend of Extra-Anejo, Anejo and Reposado Tequila, that has been aged in European oak barrels and double filtered to produce a crystal clear liquid. All Dobel Tequila blends are 100% Agave, and produced on a single estate in Mexico’s volcanic Jalisco region, where it’s distilled in small batches.
I was thrilled to be generously gifted a bottle of Diamanté in its Limited Edition Drum Case, after attending a food pairing at Bagatelle Miami Beach by our host Maestro Dobel Tequila. Along with an imitate group of media influencers, I was treated to an outstanding four course seated dinner that featured four creative Dobel signature cocktails using the Silver, Diamanté, Reposado and Anejo tequilas.
Upon arriving at the French Mediterranean restaurant, eclectically décored in black and white. I was welcomed with Bagatelle’s own signature cocktail, Hibiscus Margarita, made with Diamanté tequila. The floral syrup delicately brightened up the libation without over-powering its taste.
Bagatelle Miami’s Chef Matthieu Godard prepared such an exquisite special menu that it would be most disappointing if all these dishes were not to be added to the restaurant’s regular fare. We kicked off our dinner party with a beautifully plated and extravagant Ceviche Bagatelle – Black Grouper, Rock Shrimp, Octopus, Coconut Water, Lime Juice, Aji Amarillo, Plantain Chips served chilled inside a halved Coconut resting in a bowl of crushed ice.

This amazing starter was paired with Dobel’s After Glow tequila cocktail – Maestro Dobel Silver Tequila, Coconut Water, Lime Juice, Fresh Watermelon, and Barspoon Agave served in a rocks glass with a slice of Watermelon for garnish.
Prior to receiving each paired cocktail, we were given a sipping shot to discover each blend’s unique taste and character. The un-aged Silver is potent, but smooth enough to drink neat.
Our generously-sized second course was a delectable and spicy Jumbo Lump Crab Salad – Mango, Jalapeno, Cilantro, and drizzled with a Vadouvan Curry dressing made from blended onion, garlic, and cumin.
This was accompanied by Dobel’s Diamanté Demure – Maestro Dobel Diamanté Tequila, Grapefruit Juice, Fee Brother Peach Bitters, Rose Water, and Barspoon Agave served in a champagne flute. The rose water in this re-imagined Bellini was overwhelming, while a straight tasting of Maestro Dobel Diamanté Tequila revealed citrus flavors with a delicate, sweet finish.
For the main course, the dinner became even more incredible with a perfectly Grilled New York Strip Steak topped with tender braised Oxtail Ragout with delicious and crispy Maduros (fried Sweet Plantains), with Avocado Chutney, Chili Fresno and Chimichurri –an Argentinean sauce for grilled meats made of finely-chopped parsley, minced garlic, olive oil, oregano, and white vinegar.
This meat dish was paired by Dobel’s Clever Hook – Maestro Dobel Anejo Tequila, Pineapple Juice, Lime Juice, Miracle Mile Forbidden Bitters, and Barspoon Raw Agave. It was garnished with a Pineapple Leaf and served in a coupe glass, – or bowl-shaped, prohibition-style champagne stemware. This take on a Pisco Sour was improved with Dobel’s 24-month-aged Anejo. The rich and wheat-colored tequila has a toffee-like taste, but a peppery finish. Below is the recipe to make the cocktail at home.
CLEVER HOOK
Add:
2 oz. Maestro Dobel Anejo Tequila
1 oz. Pineapple Juice
.25 oz. Lime Juice
4 dashes of Miracle Mile Forbidden Bitters
Barspoon Raw Agave
Small Pineapple Leaf for garnish
Mix:
Build in Tin Shaker.
Shake and strain into coupe glass and garnish.
For dessert, we were served a luscious Agave Panna Cotta with Chocolate Cookie Crumbles that had a Ginger-like heat from its topping of Maestro Dobel Reposado-glazed Pineapple and Candied Lime Zest.
The meal finished strong with Dobel’s Wake Up Call, a cold coffee cocktail made with Maestro Dobel Reposado Tequila, Cold Brew Coffee, Brown Sugar, Gif Bitters and topped with foamy egg whites and a sprinkle of Cocoa Powder.
