Fall 2016 Menu Review – db Bistro Moderne
Executive Chef Clark Bowen and Chef Patissier Saeko Nemoto present their new Fall/Winter menu at db Bistro Moderne. I had the pleasure of sipping seasonal cocktails from the innovative db Bistro bar team and discover the bounty of fall produce through Clark and Saeko’s new dishes. Also featured in the menu is the new slushy, boozy drinks such as the refreshing Frosé.
db Bistro Moderne is truly a restaurant that caters to everyone and every need, whether you’re looking for a romantic date night in their low-lit dining area or a hip scene with a modern bar and live D.J. There is even an outdoor patio where people watching and relaxation with a view is readily available. We started our night in the patio sipping on the Frose followed by an Autumn Chill (bourbon concoction with apple cider and ginger beer). It was is I was enjoying a Slurpee for adults, absolutely the BEST!
Each dish was a colorful array of ingredients and flavors which not only looked beautiful on the plate it also tasted above and beyond what I expected. The roasted beets with pairs walnuts and blue cheese is the perfect, light starter for this Fall menu. The natural sweetness of the beets complimented the pears on the dish with a nice crunchy finish that the walnuts provided. The blue cheese gave it just the perfect creamy texture.
By far my all time favorite dish of the night were the diver scallops with Fall succotash, parsley and bacon jus. Largest most succulent scallops my taste buds have ever had the pleasure of enjoying. There’s nothing like enjoying some ecologically friendly scallops alongside a tropical cocktail.
Which brings me to this little cocktail number over here, the Pomegranate Capirinha. What a perfect combination for this cocktail. This one is a must for all those that enjoy a capirinha and even those who have never had one, I guarantee you’ll be hooked. Once you keep dreaming about it and want the taste back on your lips, why not try making it at home? Recipe is as follows:
POMEGRANATE CAIPIRINHA
2 oz. Pomegranate-Infused Leblon Cachaça
2 Lime Wedges
¾ Fresh Lime Juice
½ oz. Simple Syrup
Muddle the lime wedges with the simple syrup at the bottom of a shaker. Add Cachaça, fill with ice and shake. Pour into rocks glass.
Pomegrante-infused Cachaca:
-2 or 3 Pomegranates worth of pulp/seeds
-1 bottle Cachaça
-pomegranate syrup
You can continue to salivate profusely as you look at the pictures from db Bistro Moderne’s new Fall menu. Check out the lamb cavatelli served with pecorino, tomatoes and braising ju, it certainly has a richness and depth of flavor that makes it perfect for dinner.
The quail ballotine is served with foie gras, porcinis and a creamy sweet potato paste. It’s a simple yet flashy dish that is sure to please.
The crispy apple confit with phyllo, apricot jam, brown sugar crumble and scoop of granny smith apple sorbet is like a fancy apple pie and even yummier. Light and crisp, it’s the perfect choice of sweet after a heavy dinner.
Now if your sweet tooth is at an all time high, why not end the night with an arroz con leche instead. Rice pudding, caramelized bananas, roasted pecan and dulce de leche ice cream and you’ve just got the perfect serving of a majorly upgraded Latin dessert. Definitely recommend it to end the evening on a sweet note.
So much to enjoy and sip a db Bistro Moderne for their new Fall menu. Make sure you go on by this remarkable Brickell hotspot for dinner and/or drinks, it is sure to become a favorite.
