Bulla Doral – Spanish Gastrobar’s Second Miami Home

If you haven’t been to Bulla Gastrobar yet, it’s about time you pay a visit! Bulla recently opened their second South Florida location in Downtown Doral featuring Spanish plates and cocktails. Chef Miguel Rebolledo joined Bulla Doral as the Executive Chef, bringing a wealth of culinary experience. Bulla’s Doral menu highlights classic dishes from Bulla’s original Coral Gables location with some personalized modifications by Chef Rebolledo. Bulla Doral boasts the use of a Josper Oven, a unique oven that functions as both an oven and a grill simultaneously, ensuring fast cooking times.

Bulla’s Croquetas de Jamon are delicious! The crunchy bread crumb coaxed exterior and the mushy Iberico ham interior provides excellent contrasts in texture. As flavorful as the Iberico ham is, the real kicker with Bulla’s Croquetas de Jamon is the fig jelly that comes on the side. The sweetness of the fig jelly complements the fatty flavors of the jam extremely well. This was one of my favorite combinations of the night!

Gambas al Ajillo at Bulla Doral

The Gambas al Ajillo plate is essentially sautéed shrimp with garlic and guindilla peppers.  This was one of the more basic dishes off the menu on my tasting at Bulla but it was definitely solid. Perfectly cooked, succulent shrimp with prominent garlic overtones… you can’t really mess that up. The Gambas al Ajillo are a safe appetizer option for a table or particularly picky eater.

The Huevos ‘Bulla’ is a staple of Bulla’s menu that made its way over from its mother location and is a must order menu item! The Huevos ‘Bulla’ comes with eggs, homemade potato chips, Serrano ham, potato foam and truffle oil.  Pictures do this dish no justice, it’s simply delicious! There are so many layers to this dish that I was actually speechless as I ate it. There is contrast in textures with the crunchy homemade potato chips and soft mouth feel coming from the eggs and potato foam. The aroma from the truffle oil is personally pleasing, though some may snob at the use of truffle oil. I had low expectations eating an egg dish at a Spanish Gastrobar but this MIGHT have been my favorite menu item of the night.

Cubano Iberico at Bulla Doral

The Cubano Iberico is Bulla’s rendition of a Cuban Sandwich. The Cubano Iberico comes served with pan de cristal, bellota ham, piparras, presa bellota, tetilla cheese, and a mustard aioli. When you taste the sandwich you instantly think Cuban sandwich. Bulla’s interpretation of the Cuban can definitely be a crowdpleaser and a safe option for those with picky palettes.

Paella

Paella is always standout dish when it is included on a menu. Bulla’s Paella is composed of bomba rice, calamari, king prawn, clams, shrimp, hake, red sofrito, and saffron. The aromas and distinct delicate saffron flavors emanate the rice and seafood. The red sofrito adds another depth of flavor and I love getting chunks of shrimp and hake (a Spanish white fish) with each bite. What makes a great paella dish is that unique aroma and flavor profile that only saffron delivers, it’s a spice that adds such decadence whenever it’s included.

Bulla’s Arroz Marinero includes bomba rice, sofrito verde, clams, shrimp, Spanish hake, and plankton. Yes, plankton! This is the first time I’ve seen plankton included in a menu so you know I have to tell you about it. As unusual as it is to see plankton in a menu, the plankton delivered only minimal flavors in the dish. As a whole, the bomba rice seasoned with the verde sofrito which is where the flavors come through.

Bulla is an excellent spot to catch drinks, no review is over without covering at least a couple good drink options:

Moscow Mule at Bulla Doral

Moscow Mule

The Moscow Mule is a solid and traditional tasting drink option. It comes prepared with Russian Standard vodka, Fever Tree ginger beer, fresh lime juice, cardamom and currant infused syrup, and candied ginger.

Sangrias can be hit or miss sometimes, but Bulla’s Sangria Blanca is definitely a hit! Big thanks to Paola from Coral Gables Love for the recommendation; I could have ordered an entire pitcher of this! The Sangria Blanca includes cava, peach schnapps, triple sec, strawberries, and blueberries. It’s sweet, fruity and absolutely delicious. If you order the Sangria Blanca for the table, I’d be hard pressed to see that someone in the table will not enjoy it. This is one of my favorite drink options at Bulla.

Personally, my favorite drink at Bulla Doral thus far is the Suavecito, made with Cazadores Añejo tequila, Campari, Angostura bitters, cherry bitters, agave nectar, cinnamon stick. I love that you can taste the deep Añejo tequila flavors while getting the strong complex pungent undertones from the angostura and cherry bitters.

Bulla Doral is simply a fun spot. The atmosphere is always on point, which is an element of a good meal or place to get drinks that may get overlooked sometimes. The environment and vibes you get from a place as you eat and drink can really enhance an experience. Get a few cocktails and order a couple of plates to share and you have one hell of a fun outing at Bulla Doral!
