Beer Dinner Review – db Bistro Moderne w/ Wynwood Brewing Company
As crazy as it may sound, I tend to enjoy a beer pairing so much more than any other pairing dinner. There is just something about the roasted malts and herbal hops that bring out all of the flavors in a dish. I was excited to attend the beer pairing dinner at db Bistro Moderne with Wynwood Brewing Company and check out what beers they had picked out for each particular dish.
For starter we had the beer battered fried mushrooms, crispy and delicious. David and Enrique from Wynwood Brewing introduced themselves and gave us all a synopsis of what was in store for the night. It took them weeks to plan out the special menu along with Executive Chef Clark Bowen. I absolutely loved the stories that came with the naming of each beer and admired the chef’s passion for each of his recipes. The hospitality, humor and conversations made for a great evening at db Bistro Moderne.
La Rubia Blonde Ale – combination of German Pilsner Malts, British Crystal Malts, Czech Saaz Hops and German Ale Yeast, making this beer a true American Blonde Ale.
The Florida Figs – burrata, rocket coulis and focaccia tuile, was so amazing and creamy to the tongue. Cheese is definitely complemented when combined with fruits and figs were clearly a great choice. Paired with Guava the Hut, a guava infused Berliner Weiss, was the perfect match to compliment this flowering dish.
Local Pompano – Confit Fennel, Blistered Tomatoes and Lemon, paired with Wyntoberfest a Märzen / Oktoberfest style beer.
Pop’s Porter – Gold Medal winner at GABF is made with a blend of roasted malts that gives this beer a nice, roasty aroma with hints of chocolate and coffee.
Fresh made mini madeleines served warm and topped with powdered sugar had me wishing I could take a few batches home of the fluffy, delicate French cookies.
For the main dessert, a Chocolate Opera Cake – chocolate biscuit, coffee cream and vanilla ice cream. This elaborate almond sponge cake with a coffee and chocolate filling and icing was so sweetly light and complimented the smooth chocolate ganache. The perfect sweet ending to a magnificent beer pairing dinner!
