The food is presented enthusiastically, along with the attitude of the staff – they know their dishes are quite impressive. The presentation of each dish is carefully constructed and bestowed with pride. To start off, I had the Burrata on Grilled Watermelon served with baby arugula, balsamic glaze and pesto sauce. First of all – DAMN! The burrata is the creamiest most melt-in-your-mouth delicatessen I have ever tasted. This dish is light, refreshing, juicy, and perfect on a hot day. The sweet and revitalizing grilled watermelon paired with the zesty pesto sauce and balsamic glaze makes for a perfect appetizer. I’ve truly never had anything like it; this unique take on a caprese is splendid and contemporary.
Executive Chef Jose Arias never disappointed. The Burrata on Grilled Watermelon was just a segue to more pristine and mouth-watering dishes. The Fried Calamari and Zucchini with marinara was a flawless addition to my meal. The calamari was perfectly crisp and the soft, ripe zucchini added a balance of texture. Accompanying the dish was a super fresh, very mild hint of spice, marinara which really drew all the flavors together.
Now when my girlfriend and I thought the flavors could not get any more astounding, were blown away by the delish, savory fragrance of the Grilled Octopus. As soon as the plate reached the table and we caught the succulent smell we could not wait to carve in! The delicious scent brought us right into the Mediterranean. When we both took that first bite we looked at each other with wide eyes: the octopus was so tender, smokey, and zesty – We couldn’t get enough!
I usually steer away from octopus because most of the time it is too chewy, but Bacco Miami executed a soft, tender, and flavorful octopus with the ends crisp to perfection! I found myself grabbing the crispy parts quickly before my friend could get to them! The Grilled Octopus had an added taste and look of freshness delightfully displayed on top of a bed of greens, tomato, and balsamic. When you combine a bite with octopus and tomato you get a balanced texture of crunch and softness – so yum!
