Verde PAMM Summer Guest Chef Dinner Series with Niven Patel
This summer, Verde PAMM Executive Chef Kaytlin Brakefield will collaborate with esteemed local guest chefs to offer an exclusive dining experience at one of Miami’s premier cultural destinations. Closing the series is Chef Niven Patel, Executive Chef of Cheeca Lodge & Spa and formerly Michael’s Genuine Food & Drink. Chef Patel is a chef that gets down and dirty with his ingredients. I have witnessed him working the field and sinking his hands deep into the soil. Those are always my favorite chefs that I have the utmost respect for.
Patel served as Chef de Cuisine under celebrity and James Beard Award-winning Chef Michael Schwartz at Michael’s Genuine Food & Drink in Miami. Patel previously held the Executive Chef position at Cheeca in 2011 after honing his skills at 3030 Ocean Restaurant at the Harbour Beach Resort and Spa in Fort Lauderdale working under Chef Dean Max for six years. He then traveled to Italy for a six-month stint where he developed his passion for agriculture, returning to the U.S. as part of the opening team for Watertable Restaurant at the Renaissance Baltimore. Following, he rejoined Chef Max at The Brasserie Restaurant and Market in the Cayman Islands. Recognized as a top rising star by StarChefs in South Florida, Patel will bring a fresh perspective to the storied beach resort, including his commitment to local farming and Miami influence and relationships.
During his stint at Michael’s Genuine, Chef Patel developed an appreciation for farm-to-table dining, working closely with farmers and purveyors. He began digging in his backyard, cultivating greens, fruits and vegetables over a sizable 2-acre plot – many of which found their home on the menu as a daily special.
