Savannah Bee Company – Delicious Natural Honey and Sweet Recipe

We are so close to spring, we can taste it! Even better, we can start to get a taste of spring with Savannah Bee Company’s 100% natural honey. I was lucky enough to get a sampling of some of Savannah Bee Company’s most popular natural honey products: Tupelo Honey, Whipped Honey, and Honey for Cheese.

These are actually really wonderfully tasting honeys. As someone who is normally subjected to your basic honey that comes in a bear-shaped squeeze bottle, it’s almost funny to realize how different real, natural honey tastes. Savannah Bee Company’s honey has very floral flavors, and just a drop on the tongue gives as much sweetness as a sweetened syrup. I drizzled the Honey for Cheese over some crumbled Stilton, and I honestly just started nibbling it off of my plate before it ever touched a cracker!

Savannah Bee Company can absolutely replace your unnatural sweeteners. Add a teaspoon of Tupelo honey to your tea, coffee, or any dish that needs a touch of sweetness.

Below is a an easy recipe that can be made at home, using Savannah Bee Company’s Whipped Honey. Welcome in the spring weather with this delicious Whipped Honey Mousse with Whipped Honey Caramel Drizzle!

Whipped Honey Mousse with Whipped Honey Caramel Drizzle

Ingredients
Makes 4, 8-ounce mousse cups

1 12-ounce bag of soft caramels (must be soft!)
2 tsp. Savannah Bee Company Whipped Honey

2 c. Heavy whipping cream
1/4 c. Sugar
2 Whole eggs, separated into whites and yolks
3 TB Sugar
1/4 tsp. Vanilla extract
2 tsp. Savannah Bee Company Whipped Honey

  1. Unwrap and place the soft caramels into a wide pot or pan. Cook the caramels on medium heat, while occasionally stirring, until the caramels have completely melted. Keep your eye on the caramels so the sugar in the candies doesn’t overcook.
  2. Stir in the first amount of whipped honey. Turn off the heat, and set the pot of whipped honey caramel aside to cool. It should thicken but not harden.
  3. In a mixing bowl with a whip attachment, whip the heavy cream on high until soft peaks form. Gently blend in the first amount of sugar in small additions. Continue whipping the heavy cream until stiff peaks have formed. Transfer the whipped cream to a container, and set it aside in a refrigerator.
  4. Wipe the mixing bowl clean, and add in the separated egg whites. Whip the egg whites on high until stiff peaks form. Use a spatula to fold the whipped egg whites into the whipped cream. Keep this mixture in the refrigerator.
  5. Wipe the mixing bowl clean one more time, and add in the remaining egg yolks. Again, whip the yolks on high until they begin to thicken. Gently pour in the last addition of sugar, and whip on high until the yolks reach “ribbon stage” The yolks should be very pale in color, and they should hold their shape briefly when drizzled from the whip attachment.
  6. Whip the vanilla extract and final amount of whipped honey into the egg yolks.
  7. Take the whipped cream/egg white mixture from the refrigerator, and use a spatula to fold it into the egg yolks in three separate additions.
  8. Once the mousse is fully combined, drizzle about half of your whipped honey caramel into the mousse. Again, use the spatula to gently fold the caramel in. Leave some streaks of caramel to be visible in the mousse. Wrap and set the leftover caramel aside on your counter for later use.
  9. Put the whipped honey mousse into the refrigerator, and allow it to set over night.

For serving, fill each mousse cup about halfway with mousse. Create a layer of assorted berries (I chose blueberries, raspberries and strawberries). Top the remainder of the cups off with the rest of your whipped honey mousse. Garnish each mousse cup with an additional berry assortment. Stir your leftover whipped honey caramel together, and drizzle it over the top of each mousse cup before serving.
