Pasta Vino Miami Review – Fresh Local Italian in North Bay Village

More than Just Italian at Pasta Vino Miami

Although North Bay Village is located on two islands between Miami and Miami Beach, it is truly its own little world. Locals love the fact that they live in a city within a city, surrounded by the clear waters of Biscayne Bay – quieter, yet just a stone’s throw away from anything they may need that isn’t on their islands. Luckily for residents and local employees, Pasta Vino Miami they affords them one less thing to venture inland for: fresh Italian food and a chef who loves to experiment.

Pasta Vino Miami

Pasta Vino Miami has been open for only six months, yet is already a hit with the local residents. Existing online reviews declare how happy patrons are to have such a gourmet kitchen nearby. Chef (and owner!) Yiannis Devert was born in France, and studied throughout France, Greece, and the USA (including cooking in the French Army). To say he has global training is an understatement.

We were greeted by the friendly and knowledgeable manager Natasha, who is easy to talk to an exudes confidence. She told us a bit about Chef Yiannis and what to expect that evening; his varied training and specialities would contribute to our dining experience. Some delicious house merlot was served to begin.

Our first dish was served in the classic form of beef carpaccio: thin, rare, and accented with fresh parmesan. I was instantly pleased. I am a huge fan of carpaccio in general, and Chef Yiannis does it well. This was followed by goat cheese baked into a French pastry, served over fresh greens – a sweet new spin on the basic goat cheese salad.

Our third dish, and easily the most surprising, was a tuna tartare that is quite possibly the best I’ve had in Miami from an Italian restaurant. Perfect texture, perfect flavor. It was realized then that there had been no exaggeration into Chef’s abilities. In continuing with the seafood trend, our pasta dish was a cream sauce with both smoked and baked salmon. The two distinct flavors and textures of the salmon added variety, while not overpowering the dish, as might happen with more than one type of fish.

Chef Yiannis enjoys improvisation, and is happy to tailor a dish to his customers, whether they are dining in-house or requesting catering. We requested meat as our final dish, and he delivered – fresh veal with a mushroom cream sauce. It was the perfect end to our around-the-world culinary experience at Pasta VIno Miami.
