La Degustation Bohême Bourgeoise is Performance Art

There are times when a dining experience is not only about the food, but is also an artistic culinary expression of fine cuisine. La Degustation Bohême Bourgeoise one of only two restaurants with a coveted Michelin star in Prague. The venue dedicates itself to transforming its fare and your experience into a live art installation. La Degustation boasts a black and white checkered open kitchen so you can watch chefs armed with tweezers “perform” their plate artistry. This 40-seat theater succeeds in imbuing a heightened sense of art and performance into its resplendent cuisine. Watching the chefs cook and plate on the kitchen stage was an entertaining and unique experience.

The restaurant boldly states that: “Food is like music; it is created by the harmony of individual tones. The drink with which you wash this harmony down can raise it to unexpected heights, just like a virtuoso’s solo, or destroy it, like someone singing out of tune. This is why we pair our foods with small taster drinks. We pair them with wine, beer and fruit juices. Your dining experience is the purpose of our life.” A restaurant that solely exists to make my belly happy is something I can ardently support. The tasting menu paired with exotic fruit juices was an enjoyable new notion. Some of the libations helped surface the plate’s flavors better than any wine would have.

La Degustation Bohême Bourgeoise’s standout dishes of the night were a fantastic Salted Duck Breast & Duck Heart with Beetroot as well as an enchanting truffled Jerusalem Artichoke. Enjoy the video of the La Degustation Bohême Bourgeoise review.
