Each course from Executive Chef Clark Bowen will be accompanied by a New World and an Old World wine of the same varietal to compare and contrast various expressions and wine-making styles of both. Inspiring dishes from Chef Clark include Crab Salad with Cucumber, Orange and Fennel, and Beef Bourguignonne with Pearl Onions, Heirloom Carrots and Mushrooms.
