Biltmore Celebrates its 90th with 9 Course Palme d’Or Dinner

The Biltmore Hotel’s award-winning, signature French restaurant Palme d’Or invites guests to celebrate the historic Coral Gables hotel’s 90th anniversary with a $90 nine-course menu. Expertly curated by Michelin-starred Executive Chef Gregory Pugin, each course reinterprets classic French fare through the utilization of modern culinary techniques.

Palme d’Or’s elegant and intimate ambiance, paired with Chef Pugin’s one-of-a-kind culinary creations, make for an unforgettable evening of fine dining. Celebrating the hotel’s notable accomplishment, Chef Pugin has created a menu that offers guests a taste of authentic French cuisine, using fresh, local and sustainable ingredients.

The nine-course menu, priced at $90 per person, is exclusively available from July 1 to July 31.

The specially crafted menu at Palme d’Or – one of only three Five Diamond restaurants in Florida – features inspired dishes including L’Oursin Et Langoustine (Sea Urchin Custard, Poached Langoustine, Golden Osetra Caviar, Granny Smith Apple Gelee), Le Cabillaud D’Alaska (Alaskan Black Cod Poached in Coconut Milk, Sweet Potato Degustation, Curry Sauce) and La Degustation de Chocolats Valrhona (Caramelia and Dulcey Valrhona Chocolate Tasting).

Le Crabe Royal D’Alaska -King Crab, Carrots, English Peas, Cipollini Onions, Grissini

Second Course
L’Oursin Et Langoustine -Sea Urchin Custard, Poached Langoustine, Golden Osetra Caviar, Granny Smith Apple Gelee

Third Course
Le Poulpe Et L’Escargots de Bourgogne -Spanish Octopus, Burgundy Snails, Wild Mushroom, Spring Onions Emulsion

Palme d’Or is located inside The Biltmore Hotel at 1200 Anastasia Avenue in Coral Gables. The nine-course menu, priced at $90 per person, is exclusively available from July 1 to July 31. The restaurant is open Tuesday through Saturday from 6 to 10:30 p.m.
